Fetherston Fungi Pinot Noir 2022
Fermented in numerous small batches, predominantly destemmed, optically sorted whole-berries with the inclusion of some whole-bunches where appropriate (10%). Five days cold soak, fermented wild and pressed off skins shortly after primary fermentation. Malolactic fermentation in barrel. Eight months élevage in French oak barriques and puncheons (14% new). Bottled December 2022.
