Light on her feet and delicate like a ballerina. A blend of Pinot Noir and Gris that’s loaded with flavour and poise. Pink grapefruit, citrus blossom, Alpine strawberry and hints of freshly picked herbs. Crisp, dry and savoury, a Rosé worthy of a revolution. Saignee Pinot Noir hand-picked from the Full Moon Vineyard in Gladysdale, Upper Yarra Valley. Drained to seasoned French oak barriques and wild fermented, slow and cool. Lees stirring and left to mature in oak for 6 months before racking and blending. The Pinot Gris spent a small amount of time on skins before being pressed to tank for fermentation with aromatic yeast strains. The wine was blended with minimal fining before bottling.
